Pan-fried frozen fish with glazed carrots

Ingredients

• frozen pollock fillets
• carrots, peeled and shaped
• butter
• honey
• water
• dried thyme or rosemary
• oil

Steps

1. 1heat oil in a pan over medium-high heat and cook the frozen fish for 3–4 minutes
2. 2flip, season, reduce heat to medium and cover for another 5–6 minutes until opaque
3. 3braise the carrots in water, butter, honey and dried herbs until tender
4. 4remove the carrots and reduce the liquid over medium-high heat until the butter and honey form a glossy glaze
5. 5return the carrots to the pan and roll them through the glaze

Tweaks

• —the fish was cooked hot rather than starting in a cold pan to limit albumin leakage
• —the carrot glaze initially separated; removing the carrots and reducing fixed it
